Ingredients

Big Fat Zero noodles
200g Sweet potato, cubed
1/2 red peppers, sliced
Small handful of Green beans
2 vegetarian Quorn sausages
½ small red onions, cut into slices
1 celery sticks, finely sliced
1 garlic cloves, finely sliced
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh flat-leaf parsley
1 tablespoon balsamic vinegar
1/2 tablespoon Dijon mustard
Handful of rocket
Black pepper
1/2 teaspoon Chili powder


Directions

Preheat the grill. Steam the green beans and sweet potato for about 5 minutes and then set aside.
Place the red pepper and sausages onto a grill pan and grill for about 10 minutes, turning frequently.
Remove the peppers and leave until cool enough to handle, then peel off the skins.
In a non stick pan add the Big Fat Zero noodles, onions, celery, chili powder, garlic and soy sauce. Stir-fry for about 10 minutes or until tender.
Roughly chop the sausages and the grilled peppers, then add them to the frying pan. Also add the green beans, sweet potato, thyme, parsley, vinegar and mustard. Stir well.
Season with pepper to taste.
Transfer to a serving bowl and serve warm or cool. Toss in the rocket leaves just before serving.
