Ingredients

Big Fat Zero noodles
200g sweet potato, peeled and diced finely
150g peeled and cooked prawns
1 teaspoons of ground coriander
1/4 teaspoon of ground cumin
1/4 teaspoon of chilli powder
1/2 teaspoon of turmeric
Handful of green beans
1 garlic clove, crushed
1 cup Fish Stock
1/2 large onion, finely chopped
1 tablespoon of tomato puree
1 tomatoes, peeled and chopped
juice of 1/2 lemon


Directions

Mix all the spices in a bowl with the crushed garlic in to a paste with a little of the stock. Set aside.
Heat a non stick frying pan, add the onion, green beans and sweet potato and fry for 4-5 minutes until soft and onions are golden brown. Add the tomato puree and spice mixture, then cook for 1-2 minutes. Stir in the remaining stock and tomatoes, cover the pan and simmer gently for 20 minutes.
Add the prawns, Big Fat Zero noodles and lemon juice to the pan, and then simmer for 5 minutes more.
