Ingredients
Big Fat Zero noodles
150g shelled Prawns
200g Sweet Potato, cubed
Handful of fresh Asparagus
Handful of Cos Lettuce leaves
1 Shallot, sliced
2 cloves Garlic, chopped finely
Black Pepper
Directions
Wash the asparagus and cook for 15 minutes in boiling water. Drain and set aside.
Chop the sweet potato into small pieces then boil until soft.
Add the drained sweet potato and the prawns into a non stick pan with the Big Fat Zero noodles, garlic and chopped shallot, black pepper and soy sauce, cook on a low heat for a few minutes then leave to cool. Once cooled add the prawns, sweet potato and chopped asparagus onto a bed of salad leaves.
